How much milk do I use with my Kefir powder?
The first time you use a new sachet of Kefir powder you should use 1 litre of milk. After that the Kefir is ‘activated’ and you can then use different quantities of milk. Milk volume, including making Kefir in general, is not a precise science, so experiment to find out what works best for you. Be sure to use at least 3 spoons of Kefir from your last preparation.
How full can I fill my Kefir-making jar?
It is best not to fill any vessel above two thirds full.
How long does it take for Kefir to ferment?
The first time you use a new sachet of Kefir powder you should leave it at room temperature for 48 hours, after which the Kefir is ‘activated’. The next time you prepare the Kefir, you can leave it at room temperature for 24 hours. The only time it is left for 48 hours is when you use a new sachet of Kefir.
At what temperature do I need to culture Kefir? Do I need an incubator?
Between 18º - 28ºC [65º - 82ºF] is good and 22ºC [71º F] is optimal. Yogurt-making incubators should never be used and a warmer spot is advisable if the room temperature falls below 16ºC [60º F].
When is my Kefir ready?
Kefir is ready when it has thickened and the acidity (the taste) is to your preference. This usually takes 24 hours.
What types of dairy milk are best for making Kefir?
Kefir can be prepared with all types of milk, for example cow’s milk, goat’s milk or sheep’s milk.
What if I am lactose intolerant? Or what if I don’t drink cow’s milk? Is Kefir dairy free?
Yes, our Kefir Starter Cultures are completely dairy free. You can use soy milk to prepare Kefir however it is more difficult than with milk and some customers fail. Therefore we do not advise this type of milk.
When do I use a new sachet of Kefir?
With 1 sachet of Kefir from The Kefir Company you can make Kefir for up to 4 to 5 weeks (35 litres). After that it is best to use a new sachet of Kefir for a clean and healthy ‘new culture’ that is free of foreign bacteria.
What kind of container do you recommend for culturing Kefir in?
Ceramic containers seem to produce the best-tasting Kefir. Glass and plastic can also be used, but it is advised not to place the container in direct sunlight.
